  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 1 tsp kosher salt, plus more for seasoning
  • 1/2 tsp black pepper, freshly ground
  • 2 tbsp olive oil, divided
  • 1/2 cup tequila (silver or blanco)
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tsp lime zest (from 1 lime, finely grated)
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 tsp chipotle chili powder (or 1 chipotle pepper in adobo, minced)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with the kosher salt and black pepper. Set aside while you prepare the tequila-lime mixture.
  2. In a small bowl, whisk together the tequila, fresh lime juice, lime zest, honey, soy sauce, chipotle chili powder, ground cumin, and smoked paprika until the honey is fully dissolved. Set aside.
  3. Heat 1 tablespoon of the olive oil in a large cast-iron or heavy-bottomed skillet over medium-high heat until the oil shimmers and lightly ripples. Gently lay the chicken breasts in the skillet in a single layer—do not overcrowd.
  4. Sear the chicken for 4 to 5 minutes without moving until the bottom is deep golden brown and releases easily from the pan. Flip the breasts and cook for another 3 to 4 minutes until the other side is golden. Remove the chicken to a plate—it will not be fully cooked through.
  5. Reduce the heat to medium and let the pan cool slightly for 30 seconds. Add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté for 30 to 60 seconds until fragrant but not browned—garlic burns easily, so stir constantly.
  6. Carefully pour in the tequila-lime mixture. It will sizzle vigorously—that’s normal. Stir the sauce with a wooden spoon, scraping up any browned bits (fond) from the bottom of the pan; this adds tremendous flavor.
  7. Bring the sauce to a simmer over medium heat and let it cook for 2 to 3 minutes, until it reduces slightly and thickens to coat the back of a spoon. Taste and adjust with a pinch of salt or a drop of honey if needed.
  8. Return the seared chicken breasts to the skillet, nestling them into the sauce. Cover the skillet with a lid, reduce the heat to low, and simmer gently for 8 to 10 minutes, or until the chicken registers 165°F / 74°C in the thickest part.
  9. Once cooked, remove the chicken to a cutting board and let it rest for 5 minutes. Meanwhile, continue simmering the sauce, uncovered, over medium heat for another 2 to 3 minutes to thicken to a glaze consistency, if desired.
  10. Slice the chicken against the grain into 1/2-inch thick strips. Serve immediately with the warm sauce spooned over the top, garnished with fresh chopped cilantro.
  11. For an oven alternative: after searing both sides, place the skillet in an oven preheated to 375°F / 190°C and bake uncovered for 10 to 15 minutes until the chicken reaches 165°F / 74°C. Remove and rest as directed.
  12. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in a covered skillet over medium-low heat, adding a splash of water or lime juice to loosen the sauce, or microwave in 30-second bursts until heated through. For longer storage, freeze in a freezer-safe container for up to 3 months; thaw overnight in the refrigerator before reheating.

Notes

For the best flavor, use silver or blanco tequila—they are smoother and less oaky than aged varieties. If you prefer more heat, add an extra chipotle pepper or a pinch of cayenne. The sauce is also delicious with grilled chicken, shrimp, or as a taco filling. Leftover chicken can be shredded and used in quesadillas or salads.
