Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 cup yellow onion, thinly sliced (about 1 medium onion)
  • 3 cloves garlic, minced
  • 8 oz cremini mushrooms, thinly sliced
  • 1/2 cup dry white wine (or low-sodium chicken broth)
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp Worcestershire sauce
  • 1 tbsp fresh thyme leaves, plus extra for garnish
  • 1 tbsp fresh Italian parsley, chopped, for garnish

Instructions

  1. Pound the chicken breasts to an even 1/2-inch thickness using a meat mallet or rolling pin between two sheets of plastic wrap. This ensures they cook evenly and stay juicy—nobody wants a dry, thick end and a raw middle.
  2. Season both sides of the chicken generously with the kosher salt and black pepper. Dredge each breast in the flour, shaking off any excess, and set aside on a plate. The flour coating will help create a golden crust and thicken the gravy naturally.
  3. Place a 12-inch skillet over medium-high heat and add the olive oil. When the oil shimmers (a light wisp of smoke may appear), swirl in the butter and let it melt. The butter should foam and then quiet down—this means the pan is hot enough for a proper sear.
  4. Carefully lay the chicken breasts in the skillet, making sure not to overcrowd—work in batches if necessary. Sear for 4-5 minutes per side, until the coating is golden brown and the chicken registers 160°F / 71°C. Transfer the chicken to a plate—it will finish cooking later in the gravy.
  5. Reduce the heat to medium. Add the sliced onion to the same skillet, scraping up any browned bits from the bottom with a wooden spoon—those bits are full of flavor. Cook the onion, stirring occasionally, for 4-5 minutes, until softened and starting to caramelize.
  6. Add the minced garlic and cook for 30 seconds, just until fragrant, stirring constantly to keep it from scorching. If the garlic burns, it turns bitter—so watch it.
  7. Add the sliced mushrooms and season with a pinch of salt. Cook for 6-8 minutes, stirring occasionally, until the mushrooms release their liquid and that liquid cooks down to a shiny, almost syrupy glaze. They should be deeply browned and tender.
  8. If using wine, pour it in now, and with your wooden spoon press down on the mushrooms to lift up any remaining browned bits. Let the wine bubble and reduce by half—it should smell slightly nutty and not alcoholic—about 2-3 minutes.
  9. Stir in the chicken broth and bring to a simmer. Let the liquid reduce by about half, this takes 3-4 minutes, so the gravy concentrates in flavor.
  10. Lower the heat to medium-low and pour in the heavy cream, whisking to combine. Stir in the Worcestershire sauce and thyme leaves. let the sauce gently bubble—not boil—for 2-3 minutes, until it thickens enough to coat the back of a spoon.
  11. Nestle the chicken breasts back into the skillet, spooning some gravy over the tops. Bring the sauce back to a gentle simmer (not a rolling boil) and cook for 5-7 minutes, basting occasionally, until the chicken is cooked through and registers 165°F / 74°C.
  12. Remove the skillet from heat and let the smothered chicken rest for 5 minutes—this allows the juices to redistribute and the sauce to settle. Taste the gravy and add more salt and pepper if needed.
  13. Garnish with fresh thyme leaves and chopped parsley before serving. Serve hot over mashed potatoes, egg noodles, or steamed rice, with plenty of gravy spooned on top.

Notes

Storage: Refrigerate leftovers in an airtight container for up to 3 days. The sauce will thicken as it sits. Freezing: Freeze in a freezer-safe container for up to 2 months; thaw overnight in the fridge. Reheating: Gently reheat in a saucepan over medium-low heat, adding a splash of chicken broth or cream to loosen the sauce, about 5-7 minutes, or microwave in 30-second bursts at 70% power, stirring in between. For best results, reheat low and slow to avoid breaking the creamy sauce.
