  • 1 (3 lb) sirloin tip roast
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil, divided
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 3 medium carrots, peeled and cut into 2-inch chunks
  • 3 celery stalks, cut into 2-inch chunks
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Pat the roast dry with paper towels. This removes excess moisture, allowing the sear to develop a deep brown crust that adds rich flavor. Season generously on all sides with the kosher salt and black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until the oil shimmers. Carefully place the roast in the hot skillet. Sear without moving for 4-5 minutes, until a golden-brown crust forms. Use tongs to turn and sear all sides, including the ends, for about 4 minutes per side. Transfer to a plate.
  3. Reduce the heat to medium. Add the remaining 1 tablespoon olive oil to the skillet. Add the sliced onion and cook, stirring occasionally, for 4-5 minutes, until the onion is softened and beginning to brown. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Stir in the tomato paste and cook for 1 minute, stirring constantly, to caramelize it slightly and deepen the savory flavor. Pour in the beef broth, Worcestershire sauce, rosemary, and thyme. Scrape the bottom of the skillet with a wooden spoon to release the browned bits—this is where much of the flavor lives. Simmer for 2 minutes.
  5. Place the carrots and celery in the bottom of a 6-quart slow cooker. Lay the seared roast on top of the vegetables. Pour the onion-broth mixture over the roast, tuck the bay leaves into the liquid.
  6. Cover the slow cooker and cook on LOW for 7-8 hours, or on HIGH for 4-5 hours. The roast is done when it is fork-tender and easily shreds or slices. The internal temperature should read at least 190°F (88°C) for slicing.
  7. When the roast is done, carefully transfer it to a cutting board. Tent it loosely with foil and let it rest for 15 minutes. This allows the juices to redistribute so the roast stays moist.
  8. Strain the cooking liquid through a fine-mesh sieve, reserving the liquid and discarding the solids (or keep the carrots and celery for serving, if desired). Pour the strained liquid into a fat separator or a glass measuring cup. Skim off the excess fat. You should have about 1 1/2 cups of liquid.
  9. In a small bowl, whisk together the cornstarch and cold water to form a slurry. Pour the liquid into a small saucepan and bring to a simmer over medium heat. Whisk in the slurry and continue to simmer for 2-3 minutes, until the sauce thickens enough to coat the back of a spoon. Season with additional salt and pepper to taste.
  10. Slice the roast against the grain into 1/2-inch thick slices. Serve with the vegetables (if using) and the warm sauce, garnished with chopped parsley.

Notes

Storage: Store leftover roast and sauce in an airtight container in the refrigerator for up to 4 days. Freezing: Wrap the sliced roast and sauce separately or together in a freezer-safe container; freeze for up to 3 months. Reheating: Thaw overnight in the refrigerator. Reheat in a covered dish in a 350°F (175°C) oven for 10-15 minutes, or in the microwave in 1-minute increments until steaming. If using a slow cooker, you can keep the roast on the ‘Keep Warm’ setting for up to 2 hours before serving.
