  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 4 soft hamburger buns (or brioche buns), split and toasted
  • Optional: 1/4 cup mayonnaise for spreading on buns

Instructions

  1. Melt the butter in a large, heavy-bottomed skillet or Dutch oven over medium heat. When the butter foams and stops sizzling, add the diced onion and celery. Cook, stirring occasionally, for 5-6 minutes until the vegetables are softened and translucent, but not browned.
  2. Add the minced garlic and cook for 1 minute until fragrant, stirring constantly. The garlic should not brown, or it will turn bitter. This aromatic base builds the savory foundation for the dish.
  3. Season the chicken breasts with salt, pepper, thyme, and paprika. Place them in the skillet in a single layer. Cook for 2-3 minutes per side, just until lightly golden—this adds flavor, but the chicken will finish cooking in the liquid.
  4. Pour in the white wine (if using) and let it bubble for 1-2 minutes, scraping up any browned bits from the bottom of the pan with a wooden spoon. This deglazing step captures all the fond for extra depth.
