A rustic, deeply flavorful roast chicken that emerges from the Dutch oven with golden, crackling skin and impossibly juicy meat. The aromatic vegetables cook in the rendered fat and juices, creating a built-in side dish that soaks up every savory drop.

  • 1 whole chicken (45 lb / 1.82.3 kg), giblets removed, patted dry
  • 2 tbsp olive oil
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper, freshly ground
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried oregano
  • 2 tbsp unsalted butter, softened
  • 1 lemon, halved
  • 4 garlic cloves, smashed
  • 1 large onion, cut into 1-inch chunks
  • 3 large carrots, peeled and cut into 1-inch pieces
  • 2 celery stalks, cut into 1-inch pieces
  • 1 cup low-sodium chicken broth
  • 1/2 cup dry white wine (optional, or use extra broth)

Instructions

  1. Preheat the oven to 375°F (190°C). Position a rack in the center of the oven. Remove the chicken from the refrigerator and let it sit at room temperature for 20-30 minutes – this promotes even cooking and a juicier bird.
  2. In a small bowl, combine the kosher salt, black pepper, smoked paprika, garlic powder, thyme, rosemary, and oregano. Mix well. Pat the chicken dry with paper towels, inside and out. Place the chicken on a wire rack set over a baking sheet.
  3. Rub the softened butter all over the chicken, lifting the skin over the breast to get some underneath the skin. Then sprinkle the spice mixture evenly over the entire chicken, distributing it thoroughly and pressing gently to adhere.
  4. Place the lemon halves and smashed garlic cloves into the cavity of the chicken. The lemon will steam from the inside, adding moisture and bright citrus flavor while the garlic infuses the meat.
  5. Heat the olive oil over medium-high heat in a large Dutch oven (6-7 quart) on the stovetop. When the oil shimmers, carefully place the chicken breast-side down. Sear for 4-5 minutes, until the skin is golden brown and releases easily from the pan – do not rush this step; browning builds deep flavor.
  6. Using tongs, carefully turn the chicken breast-side up. Add the onion, carrots, and celery around the chicken. Pour in the chicken broth and white wine (if using), being careful not to pour directly over the chicken to keep the skin crispy. Bring the liquid to a gentle simmer.
  7. Place the Dutch oven lid on top and transfer to the preheated oven. Roast for 45 minutes with the lid on. The covered environment steams the chicken, ensuring the meat stays exceptionally moist.
  8. After 45 minutes, carefully remove the Dutch oven from the oven and take off the lid. Baste the chicken with the pan juices using a spoon, then return it to the oven uncovered. Roast for an additional 25-35 minutes, until the skin is deeply golden and crispy and the internal temperature reaches 165°F (74°C) in the thickest part of the thigh (not touching the bone).
  9. When the chicken is done, remove it from the oven and let it rest in the Dutch oven, uncovered, for 15-20 minutes. This resting period allows the juices to redistribute throughout the meat – carving too soon will result in dry chicken.
  10. While the chicken rests, skim any excess fat from the surface of the juices if desired. To serve, carve the chicken into pieces and arrange on a platter with the roasted vegetables. Spoon the pan juices over the top for extra flavor.

Notes

Storage: Store leftover chicken and vegetables in an airtight container in the refrigerator for up to 4 days. Freezing: The cooked chicken and vegetables can be frozen in a freezer-safe container for up to 3 months; thaw overnight in the refrigerator before reheating. Reheating: To maintain crispy skin, reheat in a preheated 350°F (175°C) oven for 15-20 minutes or until warmed through. Alternatively, reheat individual portions in the microwave on high for 2-3 minutes, but the skin will be less crisp.
