  • 2 tbsp olive oil
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 1/2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1 tsp kosher salt, plus more to taste
  • 1 bay leaf
  • 4 cups vegetable broth (or water, but broth adds depth)
  • 1 tbsp apple cider vinegar
  • Fresh cilantro for garnish (optional)

Instructions

  1. Sort through the dried pinto beans, discarding any stones or shriveled beans. Rinse the beans under cold running water in a colander. This step is crucial for food safety and texture – it removes debris and any dust that could make the broth gritty.
  2. Set the Instant Pot to Sauté mode (Normal or Medium heat) and add the olive oil. When the oil shimmers, add the diced onion. Cook, stirring constantly, for 3–4 minutes until the onion becomes translucent and softens but does not brown. The onions should smell sweet, not burnt.
  3. Add the minced garlic, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if using). Stir and cook for 60 seconds, just until the spices become fragrant. This blooming step releases their essential oils, deepening the flavor of the finished beans. Do not let the garlic brown or it will taste bitter.
  4. Add the rinsed beans, 1 teaspoon of kosher salt, the bay leaf, and 4 cups of vegetable broth. Stir everything together to ensure no beans are stuck to the bottom of the pot. Scrape any browned bits off the bottom – if there are stuck bits, deglaze with a little extra broth to prevent the ‘burn’ warning.
  5. Close the Instant Pot lid, set the valve to sealing, and select Manual/High Pressure. Set the cooking time to 35 minutes for perfectly tender but not mushy beans. If you prefer very soft, creamy beans (like for refried beans), cook for 40 minutes. The pressure build-up will take about 10 minutes.
  6. Once the cooking time completes, allow a natural pressure release for 15 minutes. This resting period is essential – it allows the beans to continue absorbing liquid without breaking apart and prevents the starchy liquid from spurting out during a quick release. After 15 minutes, carefully turn the valve to venting to release any remaining pressure.
  7. Open the lid, remove the bay leaf. Stir in the apple cider vinegar. The vinegar brightens the flavors and helps balance the earthiness of the beans. Taste and adjust salt – you’ll likely need a bit more, depending on your broth’s sodium content.
  8. For a thicker, saucier consistency, use a potato masher to gently mash about a quarter of the beans directly in the pot. Stir the mashed beans back into the liquid. This creates a natural thickening agent without adding any flour or cornstarch.
  9. Let the beans sit for 5 minutes before serving to allow the sauce to thicken further. Serve hot, garnished with fresh cilantro if desired. They are delicious as a side to grilled chicken, on top of rice, or in burrito bowls.

Storage: Refrigerate leftover beans in an airtight container for up to 5 days. The beans will thicken as they sit; add a splash of water or broth when reheating. Freezing: These beans freeze beautifully for up to 3 months in freezer-safe containers. Thaw overnight in the refrigerator. To reheat on the stovetop, place in a saucepan over medium-low heat, stirring occasionally, until warmed through (about 10 minutes). You can also microwave in 1-minute intervals, stirring between, until piping hot (165°F / 74°C), usually 2-3 minutes total.
