Pecan pie bars are rooted in Southern American cuisine, where pecans have long been a symbol of comfort desserts. The Pioneer Woman’s version uses simple ingredients like butter, brown sugar, corn syrup, and eggs to create a sticky-sweet filling poured over a golden, buttery crust. The result is an irresistible treat that’s easier to bake and serve than a traditional pie.
All-purpose flour – 2 cups
Unsalted butter – 1 cup (softened)
Granulated sugar – ½ cup
Salt – ¼ tsp
Light corn syrup – 1 cup
Brown sugar – 1 cup (packed)
Eggs – 3 large
Unsalted butter – 2 tbsp (melted)
Vanilla extract – 1 tsp
Chopped pecans – 2 cups
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Add flour and salt, mixing until crumbly. Press the dough evenly into the pan.
Bake for about 15–18 minutes until lightly golden. Remove from the oven and let it cool slightly while preparing the filling.
In another bowl, whisk together corn syrup, brown sugar, eggs, melted butter, and vanilla until smooth. Stir in chopped pecans until evenly coated.
Pour the pecan mixture over the pre-baked crust. Spread evenly with a spatula. Bake again for 25–30 minutes until the filling is set and golden brown.
Allow the bars to cool completely before cutting into squares. For clean slices, chill in the refrigerator for about 30 minutes before serving.
