  • 1 tbsp instant espresso powder
  • 3/4 cup semi-sweet chocolate chips
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 large egg yolks
  • 1 tbsp instant espresso powder
  • 1/4 tsp fine sea salt
  • 2 oz semisweet chocolate, finely chopped
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup chocolate shavings (for garnish)

Instructions

  1. Preheat the oven to 350°F (177°C). In a medium bowl, combine the chocolate wafer crumbs, 6 tbsp melted butter, 1/4 cup sugar, and 1/4 tsp salt. Stir until the crumbs are evenly moistened and hold together when pressed.
  2. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan. Use the bottom of a measuring cup to compress it evenly. Bake the crust for 10 minutes, until set and fragrant. Remove from the oven and let cool completely on a wire rack.
  3. In a medium saucepan, melt 1/2 cup unsalted butter over medium heat. Remove from heat and whisk in 1 cup sugar, eggs, and vanilla extract until smooth and glossy.
  4. In a separate bowl, sift together the flour, cocoa powder, and 1/4 tsp salt. Stir in the espresso powder. Add the dry ingredients to the butter mixture and whisk until just combined—do not overmix. Fold in the chocolate chips.
  5. Pour the brownie batter into the cooled crust and smooth the top. Bake at 350°F (177°C) for 25–30 minutes, until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter. The edges should be set and slightly pulling away from the crust. Let cool completely on a wire rack.
  6. While the brownie layer cools, make the chocolate pudding. In a medium saucepan, whisk together 2 cups milk, 1/2 cup sugar, cornstarch, egg yolks, espresso powder, and salt until smooth.
  7. Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and comes to a low boil, about 5–7 minutes. You will feel it thicken; it should coat the back of a spoon. Boil for 1 minute, then remove from heat.
  8. Add the chopped chocolate to the hot pudding and whisk until completely melted and smooth. Immediately pour the pudding over the cooled brownie layer, spreading it evenly. Press plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate for at least 2 hours, until fully chilled and set.
  9. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until soft peaks form, about 2–3 minutes. Be careful not to overwhip—stop when the cream holds a gentle peak that flops over slightly.
  10. Spread or pipe the whipped cream over the chilled pudding layer. Sprinkle with chocolate shavings. Serve chilled, cutting with a sharp knife dipped in warm water for clean slices. Store leftovers in the refrigerator.

Notes

Store the pie in the refrigerator, loosely covered, for up to 3 days. For longer storage, freeze the fully assembled pie (without the whipped cream topping) for up to 2 months. To serve, thaw overnight in the refrigerator, then top with freshly whipped cream. Individual slices can be reheated briefly in the microwave for 15 seconds if desired, but the pie is traditionally served cold.
