  • 8 oz (225 g) rotini or fusilli pasta
  • 1/2 cup (120 ml) full-fat Greek yogurt
  • 1/4 cup (60 ml) mayonnaise
  • 1/4 cup (60 ml) freshly squeezed lime juice (about 2 limes)
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1/8 tsp cayenne pepper (optional, for heat)
  • 2 tbsp finely chopped fresh cilantro, plus more for garnish
  • 1/2 cup (about 75 g) cherry tomatoes, halved
  • 1/2 cup (about 80 g) canned black beans, rinsed and drained
  • 1/2 cup (about 80 g) corn kernels (canned, drained, or thawed from frozen)
  • 1/2 cup (about 60 g) finely diced red bell pepper
  • 1/4 cup (about 40 g) finely diced red onion
  • 1/4 cup (about 30 g) crumbled queso fresco or cotija cheese (optional)
  • 1/2 avocado, diced (optional, for serving)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the rotini and cook according to package instructions until al dente, typically 8-10 minutes. Stir occasionally to prevent sticking.
  2. While the pasta cooks, prepare the dressing. In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, kosher salt, cumin, smoked paprika, chili powder, and cayenne (if using) until smooth. The dressing should be creamy and slightly tangy.
  3. Once the pasta is al dente, drain it in a colander and rinse briefly with cool water to stop the cooking process. Shake well to remove excess water, then set aside to cool completely—this prevents the dressing from becoming watery and helps the pasta absorb the flavors.
  4. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, black beans, corn, red bell pepper, and red onion. Toss gently with a spatula to distribute the vegetables evenly.
  5. Pour the dressing over the pasta mixture. Use a rubber spatula to fold everything together until every piece is coated. The salad should look glossy but not overly wet—add a splash of lime juice if it seems too dry.
  6. Stir in the 2 tablespoons of chopped cilantro. Taste and adjust seasoning with additional salt, lime juice, or chili powder if desired. Remember that flavors will meld and intensify as the salad chills.
  7. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to blend. This step is essential—serving immediately will taste less unified.
  8. Before serving, give the salad a good stir. If it has absorbed too much dressing, add a quick drizzle of olive oil or a teaspoon of lime juice to refresh it.
  9. Top with crumbled queso fresco or cotija cheese (if using) and avocado dice (if using). Garnish with extra cilantro leaves for a fresh, colorful finish.
  10. Serve chilled or at room temperature. This salad is excellent as a side dish at a barbecue or as a standalone lunch.

Notes

Storage: Keep in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended due to the fresh vegetables and yogurt-based dressing. To revive leftovers, let sit at room temperature for 10 minutes and add a splash of lime juice or milk to loosen the dressing.
