  • 2 lb russet potatoes, peeled and cut into 1-inch cubes
  • 1/2 cup full-fat sour cream
  • 1/2 cup whole milk, warmed
  • 4 tbsp unsalted butter, melted
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup sharp cheddar cheese, shredded (divided: 3/4 cup for mixing, 1/4 cup for topping)
  • 2 tbsp fresh chives, finely chopped
  • 1/4 cup cornflakes, crushed

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water by 1 inch. Add a generous pinch of salt to the water. Bring to a boil over high heat, then reduce to medium-high and simmer for 15-20 minutes, until the potatoes are fork-tender and easily pierced with a knife. Drain well.
  2. Return the drained potatoes to the hot pot and let them sit for 2 minutes to allow excess steam to escape. This helps create a fluffier mash.
  3. Add the sour cream, warmed milk, melted butter, kosher salt, and black pepper. Mash with a potato masher until smooth and creamy. Do not overmix, or the potatoes may become gummy. Fold in 3/4 cup of the shredded cheddar cheese and half of the chives.
  4. Preheat your oven to 375°F / 190°C. Lightly grease a 1.5-quart baking dish with butter or nonstick spray.
  5. Transfer the mashed potato mixture to the prepared baking dish and spread it into an even layer with a spatula.
  6. Sprinkle the remaining 1/4 cup cheddar cheese evenly over the top. Then sprinkle the crushed cornflakes over the cheese for a crunchy crust.
  7. Bake for 25-30 minutes, until the casserole is heated through and the topping is golden brown and crispy. Let it rest for 5 minutes before serving. Garnish with the remaining chives.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. To freeze, wrap the unbaked casserole tightly in plastic wrap and foil, then freeze for up to 3 months. Thaw overnight in the refrigerator before baking. To reheat, place in a 350°F / 177°C oven for 15-20 minutes, or until warmed through. For a softer topping, cover with foil during reheating.
