  • 2 tbsp olive oil, divided
  • 2 cloves garlic, minced (about 1 tsp)
  • 1/2 cup dry white wine (such as Sauvignon Blanc) or low-sodium chicken broth
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice (from 1 large lemon)
  • 1 tsp lemon zest (from 1 large lemon)
  • 1/2 cup heavy cream
  • 1 tbsp capers, drained (optional, for briny pop)
  • 2 tbsp fresh parsley, chopped, for garnish
  • Lemon slices (optional, for garnish)

Instructions

  1. Pound each chicken breast to an even 1/2-inch thickness. Place the chicken between two sheets of plastic wrap and gently pound with the flat side of a meat mallet or a rolling pin. This ensures even cooking and prevents dry spots. Pat the chicken dry with paper towels.
  2. In a shallow dish, whisk together the flour, 1/2 tsp salt, and 1/4 tsp pepper. Dredge each chicken breast in the flour mixture, shaking off any excess. The flour will help create a golden crust and will also thicken the sauce later.
  3. Heat 2 tbsp butter and 1 tbsp olive oil in a large heavy-bottomed skillet (12-inch) over medium-high heat. When the butter is foaming and the oil shimmers (about 2 minutes), place the chicken in the skillet in a single layer—do not crowd. Cook for 4-5 minutes per side, until deeply golden brown and the internal temperature reaches 165°F / 74°C. Transfer the chicken to a plate and cover loosely with foil to keep warm.
  4. Reduce the heat to medium. Add the remaining 2 tbsp butter and 1 tbsp olive oil to the skillet. Once the butter melts, add the minced garlic and sauté for 30 seconds until fragrant, scraping up any browned bits from the bottom of the pan (this is where the flavor is).
  5. Pour in the white wine (or chicken broth) and bring it to a simmer, scraping the bottom of the skillet to release the fond—the browned bits of flour and chicken. Let it cook for 2-3 minutes, until the wine is reduced by half and the alcohol smell cooks off.
  6. Add the chicken broth, lemon juice, lemon zest, remaining 1/2 tsp salt, and 1/4 tsp pepper. Bring to a gentle simmer and cook for 3-4 minutes, allowing the sauce to reduce slightly and become more concentrated.
  7. Stir in the heavy cream and capers (if using). Simmer over medium-low heat for 2-3 minutes, stirring occasionally, until the sauce is slightly thickened and coats the back of a spoon. Do not let it boil vigorously—cream can curdle if boiled hard.
  8. Return the chicken to the skillet, nestling it into the sauce. Spoon some sauce over the tops of the chicken. Let it simmer gently for 2-3 minutes to reheat and marry the flavors. Verify the chicken is still at 165°F / 74°C.
  9. Garnish with fresh parsley and lemon slices if desired. Serve immediately over pasta, rice, mashed potatoes, or with crusty bread to soak up the extra sauce.
