The massaged kale becomes silky and tender, making every bite a satisfying balance of textures and bright, fresh flavors.

  • 1 large bunch curly kale (about 12 oz / 340 g), stems removed and leaves finely chopped
  • 1/2 teaspoon kosher salt, divided
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup sliced almonds, toasted until golden and fragrant
  • 1/3 cup dried cranberries
  • 1 ripe avocado, peeled, pitted, and diced into 1/2-inch cubes
  • 2 tablespoons freshly grated Parmesan cheese (optional, omit for dairy-free)

Instructions

  1. Place the chopped kale in a large bowl. Sprinkle with 1/4 teaspoon of the kosher salt. Use your hands to massage the kale for 2 to 3 minutes, squeezing and rubbing the leaves until they become darker in color and reduce in volume by about half. This breaks down the tough fibers, making the kale tender and more pleasant to eat raw.
  2. In a small bowl or a jar with a tight-fitting lid, combine the olive oil, lemon juice, Dijon mustard, honey, remaining 1/4 teaspoon kosher salt, and freshly ground black pepper. Whisk or shake until the dressing is well emulsified and the honey is fully dissolved. Taste and adjust seasonings if desired.
  3. Pour the vinaigrette over the massaged kale and toss thoroughly until every leaf is coated. The kale should look glossy and lightly dressed, not swimming in dressing.
  4. Add the toasted almonds and dried cranberries to the salad and toss gently to distribute them evenly.
  5. Gently fold in the diced avocado, being careful not to mash it. If using, sprinkle the grated Parmesan cheese on top just before serving.
  6. Let the salad sit for 5 minutes before serving to allow the flavors to meld and the kale to soften further.
  7. Serve at room temperature or chilled. For a heartier meal, top with grilled chicken or roasted chickpeas.
  8. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day, though the avocado will oxidize and the almonds may lose crunch—best enjoyed fresh.

Freezing is not recommended as the kale and dressing will become watery and wilted. Reheating: Not applicable—this salad is served raw.
