  • 1 1/2 cups chocolate sandwich cookie crumbs (about 15 cookies, finely ground)
  • 5 tablespoons unsalted butter, melted
  • 2 pints (4 cups) vanilla ice cream, slightly softened
  • 1/2 cup hot fudge sauce (store-bought or homemade), at room temperature
  • 1/2 cup heavy cream, cold
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract
  • Optional: maraschino cherries or chocolate shavings for garnish

Instructions

  1. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Stir until the crumbs are evenly moistened and resemble wet sand.
  2. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Use the bottom of a measuring cup to compact the crust evenly. Place the crust in the freezer for 10-15 minutes to set while you prepare the filling.
  3. In a large bowl, scoop the slightly softened vanilla ice cream. Use a spatula to stir it until it is smooth and spreadable but not melted. Work quickly to prevent it from becoming too runny.
  4. Remove the crust from the freezer. Spoon the softened ice cream into the chilled crust, spreading it evenly with an offset spatula. Smooth the top.
  5. Drizzle the hot fudge sauce over the ice cream layer, spreading it gently to cover the surface. If the fudge is too thick to spread, warm it slightly for a few seconds in the microwave to loosen it.
  6. Place the assembled pie in the freezer for at least 4 hours, or until completely firm. For best texture, freeze overnight.
  7. Just before serving, prepare the whipped cream. In a chilled mixing bowl, beat the cold heavy cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed. Beat until soft peaks form, about 2-3 minutes. Do not overbeat or the cream will become grainy.
  8. Remove the pie from the freezer 5-10 minutes before serving to allow slight softening for easier slicing. Dip a sharp knife in hot water, wipe dry, then slice the pie into wedges.
  9. Top each slice with a generous dollop of whipped cream. Garnish with cherries or chocolate shavings if desired. Serve immediately.

Notes

Storage: Store leftover pie in the freezer, tightly covered with plastic wrap or foil, for up to 1 month. To serve leftover slices, let them stand at room temperature for 5-10 minutes to soften slightly. Reheating: Not applicable – this dessert is served frozen. Make-ahead: The pie can be fully assembled and frozen up to 2 days ahead.
