The juicy, sweet tomatoes contrast beautifully with the mild cheese and sharp dressing, creating a simple yet elegant salad that’s perfect for any gathering.

  • 2 lb mixed heirloom tomatoes, assorted colors and sizes, cored and cut into 1-inch pieces or wedges
  • 1/2 small red onion, thinly sliced (about 1/2 cup)
  • 2 tbsp sherry vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp fine sea salt, plus more to taste
  • 1/4 tsp freshly ground black pepper, plus more to taste
  • 6 tbsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 8 oz fresh mozzarella, torn into bite-sized pieces (about 1 cup)
  • 1/2 cup fresh basil leaves, torn if large

Instructions

  1. Place the tomatoes in a large serving bowl. Add the sliced red onion and gently toss to distribute.
  2. In a small bowl, whisk together the sherry vinegar, Dijon mustard, salt, and pepper until well combined.
  3. Slowly drizzle in the olive oil while whisking constantly to emulsify the vinaigrette. Whisk until the dressing is smooth and slightly thickened.
  4. Stir in the minced garlic and let the dressing sit for 5 minutes to allow the garlic flavor to infuse.
  5. Drizzle the dressing over the tomatoes and onions. Using a rubber spatula or large spoon, gently fold everything together, being careful not to crush the tomatoes.
  6. Add the torn mozzarella and basil leaves. Toss very gently one more time to distribute without breaking up the cheese.
  7. Taste and adjust seasoning with more salt and pepper if needed.
  8. Let the salad sit at room temperature for 10 minutes before serving to allow the flavors to meld.
  9. Serve directly from the bowl, making sure each portion gets a good amount of dressing and cheese.

Notes

Storage: This salad is best served immediately. If needed, store leftovers in an airtight container in the refrigerator for up to 1 day—the tomatoes will release juices and the basil may darken. Bring to room temperature before serving. Freezing is not recommended as it will destroy the texture of the tomatoes and mozzarella. Reheating is not recommended.
