  • 2 tablespoons green crème de menthe
  • 1 tablespoon white crème de cacao
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 cup semisweet chocolate chips, for garnish
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the crust: In a medium bowl, combine 1 1/4 cups chocolate cookie crumbs with 1/4 cup melted unsalted butter. Stir until the crumbs are evenly moistened and hold together when pressed. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Use the bottom of a measuring cup to compact it evenly. Refrigerate while preparing the filling.
  2. In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 1 minute. Add 1/2 cup granulated sugar and continue beating until the mixture is light and fluffy, scraping down the sides as needed.
  3. Add 2 tablespoons green crème de menthe, 1 tablespoon white crème de cacao, and 1 teaspoon vanilla extract. Beat on low speed until fully combined. The mixture will be a pale green color; if you want a more intense green, you can add a drop of green food coloring, but the crème de menthe provides the classic hue.
  4. In a separate chilled bowl, whip 1 cup heavy cream with 2 tablespoons powdered sugar until stiff peaks form. Be careful not to overwhip—stop when the cream holds its shape and looks glossy, not curdled.
  5. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula. Start by folding in one-third of the whipped cream to lighten the mixture, then fold in the rest until no white streaks remain. The filling should be airy and mousse-like.
  6. Pour the filling into the chilled crust, spreading it evenly with an offset spatula. Smooth the top.
  7. Melt 1/4 cup semisweet chocolate chips in a microwave-safe bowl in 15-second intervals, stirring between each, until smooth. Drizzle the melted chocolate over the pie in a decorative pattern, using a fork to create thin lines or swirls.
  8. Refrigerate the pie for at least 4 hours, or overnight, until fully set. The filling should be firm enough to slice cleanly.
  9. When ready to serve, garnish with fresh mint leaves if desired. Slice with a sharp knife dipped in hot water and wiped dry for clean cuts. Serve chilled.

Notes

Storage: The pie can be covered and refrigerated for up to 3 days. Freezing: After setting, wrap the pie tightly in plastic wrap and foil; freeze for up to 2 months. Thaw overnight in the refrigerator before serving. For a non-alcoholic version, substitute the crème de menthe and crème de cacao with 1 teaspoon peppermint extract plus a few drops of green food coloring. The texture will be similar.
