  • 1 1/2 pounds lean ground beef (90/10)
  • 2 cloves garlic, minced

  • 1/2 teaspoon smoked paprika
  • 3 cups crusty bread, cut into 1-inch cubes (about 6 ounces)
  • 1 1/2 cups Gruyère cheese, shredded (about 5 ounces)
  • 1/2 cup Parmesan cheese, finely grated (about 1.5 ounces)
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Place the oven rack in the center position. Have a 9×13-inch baking dish ready.
  2. In a large Dutch oven or heavy-bottomed pot over medium heat, melt the butter until it foams and the foam subsides. Add the sliced onions and 1/2 teaspoon of salt. Cook, stirring occasionally, for 20-25 minutes until the onions are deeply golden brown and very soft. If the onions start to stick, add a splash of water. This slow caramelization builds the sweet, savory foundation of the casserole.
  3. Sprinkle the flour over the caramelized onions and stir constantly for 1 minute. The flour will absorb the fat and form a paste (a roux). Slowly pour in the beef broth, Worcestershire sauce, and white wine while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer, then reduce the heat to low and cook for 2 minutes until slightly thickened. Remove from heat and set aside.
  4. In a separate large skillet over medium-high heat, add the ground beef. Cook, breaking the meat into small crumbles with a wooden spoon, for 6-8 minutes until browned and no longer pink. Do not drain the fat; it adds flavor. Stir in the minced garlic, dried thyme, smoked paprika, remaining 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
  5. Add the cooked ground beef to the pot with the onion sauce. Stir well to combine everything evenly. The mixture should be moist and aromatic. Spread this mixture evenly into the prepared 9×13-inch baking dish.
  6. In a medium bowl, combine the bread cubes with the remaining 1/4 teaspoon black pepper. Scatter the bread cubes evenly over the beef-onion mixture in the dish. Gently press the bread down so it absorbs some of the sauce.
  7. Sprinkle the shredded Gruyère cheese over the bread cubes in an even layer. Then top with the grated Parmesan cheese. Bake uncovered for 25-30 minutes, until the casserole is bubbly around the edges and the cheese is melted and lightly golden brown.
  8. Remove from the oven and let the casserole rest for 5 minutes. This allows the flavors to meld and the cheese to set slightly for cleaner serving. Garnish with chopped fresh parsley just before serving. Serve hot.
  9. For a stovetop-only version, after combining beef and onion sauce, transfer to a 9×13-inch baking dish and then proceed to bake as directed. This casserole does not have a reliable stovetop-only method to achieve the same browning and texture.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. To freeze, assemble the casserole completely but do not bake. Cover tightly with foil and freeze for up to 3 months. Thaw overnight in the refrigerator before baking. To reheat, place a portion on a microwave-safe plate and microwave on high for 1-2 minutes, or reheat in a 350°F (177°C) oven for 10-15 minutes until heated through. Do not use pork or bacon in this recipe; the beef provides the necessary savory depth. For a richer flavor, substitute 1/2 cup of the beef broth with an additional 1/2 cup of dry white wine, then simmer for an extra 2 minutes to cook off the alcohol.
