Pioneer Woman Curry Pumpkin Soup - recipe card

This velvety pumpkin soup is warmly spiced with curry powder and a hint of ginger, balanced by creamy coconut milk and a touch of maple syrup. Perfect as a cozy starter or a light main course, this soup delivers rich, comforting flavor with a smooth, luxurious texture.

Ingredients

Scale
  • 2 tablespoons unsalted butter (or olive oil for dairy-free, see notes)
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 1/2 teaspoons curry powder (mild or hot, to taste)
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper (optional, for heat)
  • 4 cups vegetable broth (low sodium)
  • 1 (15-ounce) can pumpkin puree (not pumpkin pie filling)
  • 1 cup full-fat coconut milk (from a can, well shaken)
  • 1 tablespoon maple syrup (or honey)
  • 1 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper, freshly ground
  • For garnish (optional): 1/4 cup toasted pumpkin seeds, 2 tablespoons plain Greek yogurt or coconut cream, fresh cilantro leaves
  • Juice of 1/2 lime (optional, for brightness)

Instructions

  1. In a large heavy-bottomed pot or Dutch oven, melt the butter over medium heat. When the butter foams and begins to sizzle, add the diced onion and a pinch of salt. Sauté for 6-7 minutes, stirring occasionally, until the onion is soft and translucent, not browned — this builds the savory base without adding bitter color.
  2. Add the minced garlic, grated ginger, curry powder, coriander, cinnamon, and cayenne (if using). Stir constantly for 30-60 seconds until fragrant. This blooms the spices, releasing their essential oils and intensifying their flavor; be careful not to let them burn.
  3. Pour in the vegetable broth, scraping the bottom of the pot with a wooden spoon to deglaze any browned bits — this lifts up all that caramelized flavor. Stir in the pumpkin puree until fully incorporated and smooth. The mixture should be a uniform deep orange.
  4. Bring the soup to a gentle simmer over medium-high heat, then reduce heat to low. Let it simmer uncovered for 20-25 minutes, stirring occasionally, until the flavors meld and the soup slightly thickens. You should see small bubbles breaking the surface, not a rolling boil.
  5. Remove the pot from the heat. Using an immersion blender, carefully blend the soup until completely smooth — this should take about 1-2 minutes. If you don’t have an immersion blender, let the soup cool for 5 minutes, then transfer it in batches to a regular blender, filling only halfway and holding a kitchen towel over the lid. Blend on low, venting the lid to allow steam to escape.
  6. Pour the pureed soup back into the pot (if using a countertop blender) and place over low heat. Stir in the coconut milk and maple syrup, mixing until well combined. The coconut milk adds richness and a silky mouthfeel, while the maple syrup rounds out the spices with a subtle sweetness.
  7. Season with 1 teaspoon kosher salt and 1/4 teaspoon black pepper. Taste and adjust seasoning — you may want more salt, a pinch of cayenne for heat, or a splash of lime juice for brightness. The soup should be flavorful, lightly sweet, and warm-spiced.
  8. Simmer the finished soup over low heat for 3-5 minutes to heat through, but do not let it boil — boiling can cause the coconut milk to separate. If the soup is too thick, add a little extra broth or water, one splash at a time, until it reaches your desired consistency.
  9. Ladle into warm bowls. Garnish each serving with toasted pumpkin seeds, a swirl of Greek yogurt or coconut cream, and fresh cilantro leaves, if desired. Serve hot, with crusty bread or a salad for a complete meal.

Notes

Storage: Cool the soup completely, then store in an airtight container in the refrigerator for up to 4 days. Freezing: Transfer to a freezer-safe container, leaving 1-inch headspace, and freeze for up to 3 months. Thaw overnight in the fridge before reheating. Reheating: Gently reheat in a saucepan over medium-low heat, stirring occasionally, until hot but not boiling. You can also microwave individual portions in 1-minute intervals, stirring between, until steaming. If the soup thickens after being chilled, thin it with a splash of vegetable broth or water. For a dairy-free version, use olive oil instead of butter and skip the Greek yogurt garnish. This soup is naturally gluten-free.
