Pioneer Woman Crock Pot Brisket

Pioneer Woman Crock Pot Brisket - recipe card

This slow-cooked brisket is the epitome of comfort food: fork-tender, deeply savory, and bathed in a rich, smoky-sweet barbecue sauce. The low-and-slow method melts the connective tissue, resulting in slices that are moist, luscious, and full of flavor. A touch of liquid smoke adds that authentic ‘pit-smoked’ taste without the grill.

Ingredients

Scale
  • 1 (3 to 3 1/2 lb) beef brisket, trimmed of excess fat
  • 1 tbsp packed light brown sugar
  • 1 tbsp smoked paprika
  • 2 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp freshly ground black pepper
  • 3/4 cup low-sodium beef broth
  • 1/2 cup ketchup
  • 1/4 cup Worcestershire sauce
  • 1/4 cup apple cider vinegar
  • 3 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp liquid smoke (optional but recommended)
  • 1 large onion, thinly sliced

Instructions

  1. In a small bowl, combine the brown sugar, smoked paprika, kosher salt, garlic powder, onion powder, and black pepper. Mix well with a fork to ensure no lumps. This dry rub provides a sweet, smoky, and savory crust that will infuse the brisket as it cooks.
  2. Pat the brisket dry with paper towels to remove any moisture — this helps the rub adhere and promotes better browning later. Generously apply the spice rub to all sides of the brisket, using your hands to massage it into the meat. Let it sit at room temperature for 20-30 minutes so the flavors can penetrate.
  3. In a medium bowl, whisk together the beef broth, ketchup, Worcestershire sauce, apple cider vinegar, honey, Dijon mustard, and liquid smoke (if using). This is your barbecue-style cooking liquid — it will keep the brisket moist and create a tangy, sweet, and savory glaze. Set aside.
  4. Place the sliced onions in the bottom of a 6-quart crock pot, spreading them out evenly. The onions act as a natural rack, preventing the brisket from sitting directly in the fat and allowing the meat to cook more tender. They’ll also caramelize and sweeten the cooking liquid.
  5. Lay the seasoned brisket on top of the onions, fat side up. If the brisket is too large, cut it to fit in a single layer — this ensures even cooking. Pour the prepared sauce over and around the brisket, making sure the top is partially coated.
  6. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours. The low-and-slow method is essential for breaking down the tough collagen in the brisket into gelatin, yielding fork-tender meat. Check at the 8-hour mark: the brisket should be fall-apart tender, and you can insert a fork into the thickest part with little resistance.
  7. Once the brisket is tender, carefully remove it from the crock pot using two forks and place it on a cutting board. Tent loosely with aluminum foil and let it rest for 10-15 minutes. Resting allows the juices to redistribute throughout the meat, preventing them from running out when you slice.
  8. While the brisket rests, skim the excess fat from the surface of the sauce in the crock pot using a large spoon or a fat separator. Taste the sauce and adjust seasoning — add a pinch of salt, a dash of vinegar, or a pinch of brown sugar if needed. If you prefer a thicker sauce, transfer it to a small saucepan and simmer over medium heat for 10-15 minutes until reduced and slightly thickened.
  9. Slice the brisket against the grain. Find the direction of the muscle fibers — cut perpendicular to them. This shortens the fibers, making each bite melt-in-your-mouth tender. Slice into 1/2-inch thick slices.
  10. Serve the brisket slices with the warm, skimmed sauce spooned over the top. Pair with roasted vegetables, mashed potatoes, or over a slice of Texas toast to soak up the delicious juices.
  11. Preheat your oven to 350°F / 175°C. This step is optional but recommended: if you want a browner, caramelized crust, place the sliced brisket on a baking sheet and brush with some of the reduced sauce. Bake for 5-10 minutes until the edges begin to char and the sauce bubbles, giving it that ‘smoked’ finish.

Notes

To store: Transfer leftover brisket and sauce to an airtight container and refrigerate for up to 4 days. The flavors will deepen overnight. To freeze: Slice or keep whole, wrap tightly in plastic wrap then foil, and freeze for up to 3 months. Thaw overnight in the fridge. To reheat: Place brisket in a baking dish with a little sauce, cover with foil, and warm in a 325°F / 163°C oven for 15-20 minutes, or until heated through. For a quicker option, microwave in 30-second bursts, adding a splash of broth to keep it moist.
