Instructions

  1. Prepare the cranberries: If using fresh cranberries, rinse and pick over them, discarding any soft or bruised ones. Coarsely chop them until pieces are about the size of peas. If using frozen, thaw completely and pat dry with a paper towel before chopping to avoid excess liquid. Place chopped cranberries in a large mixing bowl.
  2. Segment the orange: Using a sharp knife, cut off the top and bottom of the orange so it sits flat. Slice off the peel and white pith in strips, following the curve of the fruit. Over a small bowl to catch the juice, cut between the membranes to release the segments. Chop the segments into 1/2-inch pieces and add to the cranberries. Zest the orange before cutting and reserve 1 teaspoon of zest for the dressing.
  3. Add the crunchy vegetables: Add the finely diced celery and red onion to the bowl with the cranberries and orange segments. The celery provides a crisp, savory contrast to the sweet-tart berries, while the onion adds a subtle sharpness. Toss gently to combine.
  4. Toast the pecans: In a dry skillet over medium heat, add the pecan pieces and toast them, stirring frequently, for 3 to 5 minutes until fragrant and lightly browned. Immediately transfer to a plate to cool completely. Toasting brings out their nutty oils and adds depth to the salad.
  5. Make the dressing: In a small bowl, whisk together the Greek yogurt, honey, lemon juice, reserved orange zest, kosher salt, black pepper, and cinnamon if using. Whisk until smooth and well combined. The yogurt provides creamy tang, honey balances the tartness of the cranberries, and lemon brightens the dressing.
  6. Combine the salad and dressing: Add the cooled toasted pecans to the cranberry mixture, then pour the dressing over the top. Fold everything together with a rubber spatula until all ingredients are evenly coated. Taste and adjust seasoning with more salt or honey if needed.
  7. Let it rest (optional but recommended): Cover the bowl and refrigerate for 15 to 30 minutes before serving to allow the flavors to meld and the cranberries to soften slightly. this step mellows the sharpness of the onion and lets the dressing permeate the salad.
  8. Serve: Stir the salad once more before serving. Spoon it into a serving bowl or onto individual plates. Serve chilled or at room temperature, garnished with a few extra toasted pecans and maybe a small curl of orange zest if desired.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The salad is best served within the first day; the cranberries may soften more over time. To freeze, place the salad in a freezer-safe container for up to 1 month, but note that the texture of celery and pecans may change upon thawing—add fresh toasted pecans before serving. This salad is not meant to be cooked or heated; serve chilled or at room temperature. For a dairy-free option, substitute coconut yogurt for the Greek yogurt and maple syrup for honey.
