Pioneer Woman Cowboy Caviar

Pioneer Woman Cowboy Caviar recipe

Cowboy Caviar, sometimes called Texas Caviar, is essentially a chunky salsa or salad made with beans, corn, peppers, onions, and a tangy vinaigrette. It pairs beautifully with tortilla chips as a dip, or you can serve it as a side dish alongside grilled meats. Its versatility makes it stand out—you can customize it based on what’s in your pantry without losing its vibrant charm.

Ingredients

  • Black beans (canned, drained, and rinsed)

  • Black-eyed peas (canned, drained, and rinsed)

  • Sweet corn (canned or fresh)

  • Red bell pepper

  • Green bell pepper

  • Red onion

  • Jalapeño (for heat, optional)

  • Cherry tomatoes

  • Avocado (for creaminess)

  • Step 2: Chop the vegetables – Dice the bell peppers, onion, jalapeño, tomatoes, and avocado into small bite-sized pieces.

  • Step 3: Mix the dressing – In a small bowl, whisk olive oil, red wine vinegar (or lime juice), honey, salt, and pepper.
