  • 1 box (8.5 oz / 240g) cornbread mix (prepared per package instructions, cooled and crumbled)
  • 1/2 cup mayonnaise (full-fat, such as Duke’s or Hellmann’s)
  • 1/2 cup sour cream (full-fat)
  • 1/4 cup buttermilk
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1/2 tsp kosher salt, plus more for seasoning
  • 1/4 tsp black pepper, freshly ground
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1 (15 oz / 425g) can pinto beans, drained and rinsed
  • 1 (15 oz / 425g) can corn, drained
  • 2 medium tomatoes, seeded and diced (about 1.5 cups)
  • 1/2 cup red onion, finely diced
  • 1/2 cup green bell pepper, finely diced
  • 1/2 cup celery, finely diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh chives, snipped

Instructions

  1. Preheat the oven according to the cornbread mix package instructions (typically 400°F / 200°C). Prepare the cornbread mix in a greased 8-inch square baking pan, bake for the recommended time (about 20-25 minutes), and let cool completely on a wire rack. Do not skip cooling—warm cornbread will cause the dressing to break and the salad to become soggy.
  2. While the cornbread cools, make the dressing. In a medium bowl, whisk together the mayonnaise, sour cream, buttermilk, apple cider vinegar, sugar, 1/2 tsp kosher salt, black pepper, and optional cayenne until smooth and creamy. The dressing should be pourable but thick enough to coat the ingredients; adjust with a splash more buttermilk if needed.
  3. Crumble the cooled cornbread into coarse crumbs into a large bowl. You should have about 4 cups. If any large chunks remain, break them up with your hands. Set aside.
  4. Add the drained pinto beans and corn to the bowl with the cornbread. Stir gently with a rubber spatula to combine without crushing the beans or corn.
  5. Add the diced tomatoes, red onion, bell pepper, celery, fresh parsley, and chives. Fold everything together until the ingredients are evenly distributed.
  6. Pour the dressing over the cornbread mixture. Gently fold with a rubber spatula until every crumb is moistened and the dressing is evenly incorporated. Be careful not to overmix, as the cornbread will start to paste.
  7. Taste and adjust seasoning with additional salt and pepper if needed. The salad should be well-seasoned, as cornbread tends to absorb flavors.
  8. Transfer the salad to a serving bowl. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld and the cornbread to absorb the dressing. Serve chilled.
  9. Garnish with extra chopped parsley or chives just before serving if desired. Enjoy within 24 hours for the best texture.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. The salad is best served the same day, as the cornbread will continue to soften. To refresh, add a spoonful of buttermilk and stir gently before serving. Freezing is not recommended—the texture of the cornbread and vegetables will degrade.
