3 cups cooked chicken, shredded (rotisserie works best)
2 cups Nacho Cheese Doritos, lightly crushed
1 can of cream of chicken soup
½ cup sour cream
1 cup salsa (mild, medium, or hot)
1 cup shredded cheddar cheese (plus more for topping)
1 tsp chili powder
1 tsp cumin
½ tsp garlic powder
Fresh cilantro or green onions, chopped (optional for garnish)
Preheat oven – Set oven to 350°F (175°C).
Make filling – In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, salsa, cheese, and spices. Stir until well mixed.
Layer casserole – Grease a 9×13-inch baking dish. Spread a layer of crushed Doritos on the bottom, add half the chicken mixture, then repeat.
Top with cheese and chips – Sprinkle extra cheese and more crushed Doritos on top.
Bake – Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until golden and bubbly.
Serve hot – Garnish with cilantro or green onions if desired and serve immediately.
