  • 1/4 cup full-fat Greek yogurt
  • 1 tbsp freshly squeezed lemon juice (from about 1/2 lemon)
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 garlic clove, minced
  • 1/2 cup finely grated Parmesan cheese, divided
  • 4 large flour tortillas (10-inch)
  • 4 cups romaine lettuce, chopped (about 1 head)
  • 1/4 cup shaved Parmesan cheese (for garnish, optional)

Instructions

  1. Pound chicken breasts to even 1/2-inch thickness using a meat mallet. This ensures even cooking and quick, tender results. Pat dry with paper towels and season both sides with kosher salt and black pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. The oil should move easily across the pan and ripple, but not smoke. Gently place chicken in the skillet, working in batches if needed to avoid crowding.
  3. Cook chicken for 6-7 minutes without moving it, then flip with tongs. Cook another 6-7 minutes until the internal temperature reaches 165°F (74°C) and the outside is golden brown. Transfer to a cutting board and let rest for 5 minutes before slicing.
  4. While chicken rests, make the Caesar dressing. In a medium bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and 1/4 cup of the grated Parmesan. Whisk until smooth and creamy. Season with salt and pepper to taste.
  5. Slice the rested chicken into thin, bite-sized strips or cubes. The chicken should be juicy and tender.
  6. Warm the flour tortillas in a dry skillet over medium heat for about 20-30 seconds per side, or until pliable. This makes them easier to wrap without cracking. Alternatively, stack and microwave on high for 15-20 seconds.
  7. Spread about 2 tablespoons of the Caesar dressing evenly over each tortilla, leaving a 1-inch border around the edges. This layer ensures every bite is flavorful.
  8. Divide the romaine lettuce among the tortillas, placing it in the center. Top with sliced chicken and sprinkle with remaining grated Parmesan and shaved Parmesan if using.
  9. Fold in the sides of each tortilla, then roll tightly from the bottom, keeping the filling secure. If you prefer a toasted wrap, place the rolled wrap seam-side down in the same skillet over medium heat for 2-3 minutes per side, until golden brown and crispy.
  10. Slice each wrap in half on a diagonal and serve immediately. For a lighter option, serve alongside extra Caesar dressing for dipping.

Notes

Store leftover wraps tightly wrapped in plastic wrap or in an airtight container in the refrigerator for up to 2 days. They may become soggy due to lettuce, so if you plan to meal-prep, store components separately and assemble right before eating. To reheat, if toasted, warm in a 350°F (177°C) oven for about 5 minutes or in an air fryer at 300°F (149°C) for 3-4 minutes. For freezing, not recommended for assembled wraps due to lettuce and dressing; freeze cooked chicken and dressing separately, then assemble fresh when ready.
