  • 1 lb (450 g) lean ground beef (90/10)
  • 1 tbsp olive oil
  • 1/2 cup yellow onion, finely diced
  • 1 clove garlic, minced
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp kosher salt, divided
  • 1/2 tsp freshly ground black pepper, divided
  • 1 pre-baked 12-inch pizza crust (such as Boboli or thin crust from bakery)
  • 1 cup pizza sauce (or crushed tomatoes)
  • 2 cups shredded sharp cheddar cheese (8 oz / 225 g)
  • 1 cup shredded low-moisture mozzarella cheese (4 oz / 115 g)
  • 1 large egg, beaten (for egg wash, optional)
  • For the special sauce:
  • 1/3 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • 1/2 tsp granulated sugar

Instructions

  1. Preheat your oven to 450°F (230°C). If you have a pizza stone, place it on the lower rack to preheat as well; otherwise, use a heavy-duty baking sheet. A screaming-hot surface ensures a crisp crust.
  2. In a large skillet, heat the olive oil over medium-high heat until it shimmers. Add the finely diced onion and cook, stirring occasionally, for 2-3 minutes until translucent and fragrant. The onion should soften but not brown.
  3. Add the ground beef to the skillet. Break it apart with a wooden spoon or spatula. Cook over medium-high heat, stirring frequently, until the beef is browned and cooked through, about 5-7 minutes. Drain off any excess fat, then reduce heat to medium.
  4. Stir in the minced garlic and cook for 30 seconds until aromatic, being careful not to burn it. Add the tomato paste, Worcestershire sauce, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Cook, stirring, for 1 minute until the mixture is well combined and slightly caramelized. Remove from heat and set aside.
  5. While the beef cools slightly, prepare the special sauce. In a small bowl, whisk together the mayonnaise, ketchup, sweet pickle relish, white vinegar, and sugar. Set aside. This sauce adds a creamy, tangy contrast to the savory beef and cheese.
  6. Lightly brush the rim of the pizza crust with the beaten egg, if using. This helps create a golden, shiny edge. Place the crust on a pizza peel or a sheet of parchment paper for easy transfer if using a hot stone.
  7. Evenly spread the pizza sauce over the crust, leaving a 1/2-inch border around the edge for the crust to crisp up. Use the back of a spoon to spread it thinly so the crust stays crisp.
  8. Sprinkle half of the shredded cheddar and mozzarella over the sauce. Then distribute the cooked ground beef mixture evenly across the pizza. Finally, top with the remaining cheese, making sure the beef is fully covered by cheese—this helps everything melt together and prevents the meat from drying out.
  9. Carefully slide the pizza (with parchment, if using) onto the preheated stone or place the baking sheet in the oven. Bake for 10-12 minutes, or until the cheese is melted and bubbly and the crust is golden brown and crisp. For a golden top, you can switch to broil for the last 1-2 minutes, but keep a close eye to prevent burning.
  10. Remove the pizza from the oven and let it rest for 2-3 minutes. This allows the cheese to set slightly so it doesn’t slide off when slicing.
  11. Slice the pizza into 8 slices, then drizzle the special sauce over the top in a zigzag pattern. You can also serve extra sauce on the side for dipping. Garnish with chopped fresh parsley or green onions if desired, then serve hot.

Notes

Storage: Refrigerate leftover pizza in an airtight container for up to 3 days. Freezing: Wrap individual slices tightly in plastic wrap and then foil; freeze for up to 2 months. Reheat: For best results, reheat slices in a toaster oven or conventional oven at 350°F / 175°C for 5-7 minutes, or until hot and crispy. Microwave is faster but will soften the crust. The special sauce can be made ahead and stored in the fridge for up to 1 week.
