  • 1 large head cauliflower (about 2 lb / 900 g), cut into bite-size florets
  • 3 tbsp unsalted butter, plus more for greasing the baking dish
  • 3 tbsp all-purpose flour
  • 2 cups whole milk, warm
  • 1 tsp kosher salt, plus more for the boiling water
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp ground nutmeg
  • 1/2 tsp Dijon mustard
  • 8 oz sharp cheddar cheese, shredded (about 2 cups)
  • 1/2 cup panko breadcrumbs
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, finely chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 2-quart baking dish with butter and set it aside.
  2. Fill a large pot with water and bring it to a boil over high heat. Add 1 tablespoon of kosher salt, then carefully add the cauliflower florets. Cook for 3-4 minutes, until the cauliflower is just tender when pierced with a fork but still holds its shape. Drain well and set aside.
  3. While the cauliflower cooks, start the cheese sauce. In a medium saucepan, melt the 3 tablespoons of butter over medium heat. Once the butter has melted and foams but does not brown, whisk in the flour. Cook for 1-2 minutes, stirring constantly, until the mixture turns a light golden color and smells nutty — this roux thickens the sauce.
  4. Slowly pour in the warm milk, whisking continuously to prevent lumps. Bring the mixture to a simmer over medium heat, whisking often, until it thickens enough to coat the back of a spoon, about 3-4 minutes. The sauce should be smooth and velvety.
  5. Remove the saucepan from the heat. Stir in the salt, pepper, nutmeg, and Dijon mustard. Add the shredded cheddar cheese in handfuls, stirring after each addition, until the cheese is completely melted and the sauce is glossy. Taste and adjust seasoning if needed.
  6. In a small bowl, combine the panko breadcrumbs, olive oil, and a pinch of salt. Toss with your fingers until the breadcrumbs are evenly coated — this will help them brown and crisp in the oven.
  7. Place the drained cauliflower florets into the prepared baking dish in an even layer. Pour the cheese sauce over the top, using a spatula to gently fold and coat every floret with sauce.
  8. Sprinkle the breadcrumb mixture evenly over the top of the casserole. Place the dish on a baking sheet to catch any drips.
  9. Bake in the preheated oven for 20-25 minutes, until the sauce is bubbly around the edges and the top is golden brown. If you prefer a deeper crunch, switch to broil for the last 1-2 minutes, but watch closely to avoid burning.
  10. Let the casserole rest for 5 minutes before serving — this allows the sauce to set slightly and prevents it from running. Sprinkle with chopped fresh parsley if desired, then serve warm.

Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. To reheat, place individual portions in a microwave-safe dish and heat in 30-second bursts until hot, or reheat in a 350°F (177°C) oven for 10-15 minutes. Freezing: Assemble the casserole but do not bake, wrap tightly, and freeze for up to 2 months. Thaw overnight in the refrigerator, then bake as directed, adding 5-10 minutes to the baking time. The breadcrumb topping may soften after freezing; for a crunchier finish, sprinkle fresh breadcrumbs on top before reheating.
