Each bite is a perfect balance of juicy, tangy, and herbaceous flavors with a silky, melt-in-your-mouth texture.

  • 4 large ripe tomatoes (about 2 lbs / 900g), preferably heirloom or vine-ripened, sliced 1/4-inch (6mm) thick
  • 1 lb (450g) fresh mozzarella cheese (log or balls), sliced into 1/4-inch (6mm) thick rounds
  • 1 cup (about 20g) fresh basil leaves, larger leaves torn if desired
  • 3 tablespoons (45ml) extra-virgin olive oil
  • 2 tablespoons (30ml) balsamic glaze (store-bought or homemade, see note)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Flaky sea salt (such as Maldon) for finishing (optional)

Instructions

  1. Select a large, flat serving platter or a rimmed plate. Gently blot the tomato slices with a paper towel to remove excess moisture—this helps the dressing cling and prevents a watery salad.
  2. Arrange the tomato slices on the platter in a single layer, slightly overlapping. If using a mix of tomato colors, alternate them for visual appeal.
  3. Lay the fresh mozzarella slices over the tomatoes, either directly on top or nestled between them. Aim for a roughly even distribution so every serving includes both ingredients.
  4. Tuck the basil leaves among the tomato and mozzarella slices. If using large leaves, tear them by hand—this releases more aroma than cutting with a knife, which can bruise the leaves.
  5. Drizzle the extra-virgin olive oil evenly over the entire salad. Use a gentle circular motion to ensure all pieces are lightly coated.
  6. Drizzle the balsamic glaze in a zigzag or spiral pattern over the top. Start with 1 1/2 tablespoons, then add more if desired—you want a tangy sweetness that complements but doesn’t overwhelm.
  7. Sprinkle the fine sea salt and freshly ground black pepper evenly over the salad. If using flaky sea salt, add it now or just before serving for a delicate crunch.
  8. Let the salad rest at room temperature for 5–10 minutes before serving. This allows the tomatoes to release their juices and the flavors to meld, but do not over-rest or the mozzarella may become weepy.
  9. Serve immediately, offering additional balsamic glaze and olive oil on the side if anyone prefers an extra drizzle. This salad is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 1 day—bring to room temperature before serving again.

Notes

Storage: This salad is best served immediately. Leftovers can be refrigerated in an airtight container for up to 24 hours, but the tomatoes may release liquid and the basil may wilt. Freezing is not recommended. To make your own balsamic glaze: simmer 1 cup balsamic vinegar with 2 tablespoons brown sugar over medium-low heat until reduced by half, about 10–15 minutes; let cool before using. For a more substantial version, add slices of grilled chicken or shrimp (omit pork/bacon as per dietary preference).
