  • 2 cups cooked chicken breast, shredded (about 2 medium breasts)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup shredded sharp Cheddar cheese, divided (4 oz)
  • 1/2 cup crumbled blue cheese (optional, for topping)
  • 1 tbsp chopped fresh chives (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 1-quart baking dish (8×8 or similar) with butter or nonstick spray.
  2. In a medium bowl, combine the softened cream cheese and sour cream. Stir until smooth and no lumps remain. The cream cheese must be fully softened to ensure a silky texture.
  3. Add the ranch dressing, hot sauce, garlic powder, onion powder, salt, and pepper. Whisk until the mixture is well combined and creamy. Taste and adjust seasoning if desired.
  4. Fold in the shredded chicken and 1/2 cup of the shredded Cheddar cheese. Mix gently until the chicken is evenly coated with the sauce mixture.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  6. Sprinkle the remaining 1/2 cup of Cheddar cheese over the top, followed by the crumbled blue cheese (if using).
  7. Bake for 20-25 minutes, or until the dip is hot and bubbly around the edges and the top is golden brown. If you prefer a browned top, you can broil for the last 1-2 minutes, watching carefully.
  8. Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped chives if desired. Serve warm with celery sticks, tortilla chips, or crusty bread.

Notes

Storage: Refrigerate any leftovers in an airtight container for up to 4 days. Reheat in the microwave in 30-second intervals stirring in between, or in the oven at 350°F (175°C) for 10-15 minutes until hot. Freezing: The unbaked dip can be assembled, covered tightly, and frozen for up to 2 months. Thaw overnight in the refrigerator before baking. Add 5-10 minutes to the baking time if baking from frozen.
