Pioneer Woman Boozy Berry Upside-Down Cake

Pioneer Woman Boozy Berry Upside-Down Cake - recipe card

A boozy, buttery upside-down cake with a caramelized berry topping and a tender vanilla cake base. Warm berries release their juices into a rum-laced glaze, creating a sticky, vibrant crown that inverts onto a golden crumb.

Ingredients

Scale
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup packed light brown sugar
  • 2 tablespoons dark rum
  • 1 cup mixed fresh berries (such as raspberries, blackberries, and halved strawberries)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon fine sea salt
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 1 large egg, at room temperature
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons whole milk, at room temperature

Instructions

  1. Preheat the oven to 350°F (177°C). Lightly grease a 6-inch round cake pan (at least 2 inches deep) with a small amount of softened butter or non-stick spray. In a small bowl, stir together the 2 tablespoons softened butter and brown sugar until sandy. Add the dark rum and stir until a thick paste forms. Spread this mixture evenly over the bottom of the prepared pan.
  2. Arrange the berries in a single layer over the brown sugar paste, packing them close together but not overlapping. Press them gently into the paste so they are partially submerged. Set aside while you prepare the cake batter.
  3. In a small bowl, whisk together the all-purpose flour, baking powder, and fine sea salt. In a separate medium bowl, beat the granulated sugar and 2 tablespoons softened butter with an electric mixer on medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl halfway through.
  4. Add the room-temperature egg and vanilla extract to the butter-sugar mixture. Beat on medium speed until fully incorporated and the batter looks pale and smooth, about 1 minute. The egg should be fully emulsified with no visible streaks.
  5. Add half of the flour mixture to the batter and mix on low speed until just combined, about 15 seconds. Pour in the milk and mix on low until almost combined, then add the remaining flour mixture. Mix on low just until no dry streaks remain — do not overmix, or the cake will be tough. The batter will be thick and slightly sticky.
  6. Spoon the batter carefully over the berries, spreading it gently to the edges of the pan with a small offset spatula or the back of a spoon. The batter should cover the fruit completely; poke any air bubbles with a toothpick.
  7. Bake on the middle rack of the preheated oven for 30 to 35 minutes, until the top is golden brown and a toothpick inserted into the center (through the cake layer, not through the berry layer) comes out clean. The edges should pull slightly away from the pan.
  8. Transfer the pan to a wire rack and let the cake cool for exactly 10 minutes. Do not let it cool longer, or the sugar will harden and stick to the pan. Run a thin knife around the inside edge of the pan to loosen the cake.
  9. Place a serving plate upside down over the cake pan. In one swift, confident motion, invert the plate and pan together, then lift the pan off. If any berries stick to the pan, carefully reposition them onto the cake with a small spatula. Let the cake cool completely on the plate, about 30 minutes, before slicing. Serve warm or at room temperature.

Notes

Store leftovers covered at room temperature for up to 2 days. To freeze, wrap the cooled cake tightly in plastic wrap and then foil; freeze for up to 1 month. Thaw at room temperature, then reheat individual slices in a 300°F (150°C) oven for 5–8 minutes. For a non-alcoholic version, substitute the dark rum with 2 tablespoons of fresh orange juice plus 1/2 teaspoon vanilla extract. The rum adds depth and balances the sweetness; do not skip it unless necessary.
