A classic, creamy chicken salad that’s both comforting and elegant. Tender shredded chicken is enrobed in a lightly tangy dressing with crisp celery, sweet grapes, and crunchy pecans, served best on soft bread or crisp lettuce.

  • 1.5 lb (680 g) boneless, skinless chicken breasts (about 3 small breasts)
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp kosher salt, plus more for the cooking water
  • 1/4 tsp freshly ground black pepper, plus more for the dressing
  • 1/2 cup full-fat Greek yogurt
  • 1/4 cup mayonnaise (preferably Hellmann’s or Duke’s)
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp honey
  • 1/2 cup celery, finely diced (about 1 large stalk)
  • 1/2 cup red grapes, halved (about 4 oz)
  • 1/4 cup pecans, toasted and chopped (about 1 oz)
  • 2 tbsp fresh chives, thinly sliced (or green onion tops)
  • For serving: lettuce leaves, croissants, or bread of your choice
  • Additional salt and pepper, to taste

Instructions

  1. Place the chicken breasts in a medium saucepan and cover with cold water by 1 inch. Add 1 tablespoon of kosher salt (this seasons the meat throughout). Bring to a gentle simmer over medium-high heat, then reduce heat to low, cover, and cook for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). The water should never boil hard—just a few lazy bubbles.
  2. While the chicken cooks, prepare the dressing. In a large mixing bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, honey, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until smooth and creamy. Taste and adjust seasoning—you want it slightly more salty than you think, as it will season the chicken.
  3. Remove the chicken from the cooking water and set on a cutting board. Let it rest for 5-10 minutes, until cool enough to handle. This resting period allows the juices to redistribute, keeping the meat moist.
  4. Shred the chicken using two forks or your fingers. Pull the meat apart into bite-sized pieces, about 1/2-inch wide. If you prefer a finer texture, chop it with a knife. Place the shredded chicken into the bowl with the dressing and toss gently to coat every piece.
  5. Add the diced celery, halved grapes, toasted pecans, and chives to the chicken mixture. Fold everything together with a rubber spatula until evenly distributed. The grapes add pops of sweetness, celery gives crunch, and pecans provide nutty texture—don’t smash them.
  6. Taste the chicken salad and adjust seasoning with additional salt and pepper if needed. If the salad seems too thick, stir in 1-2 teaspoons of water or extra lemon juice to loosen it.
  7. Cover the bowl and refrigerate for at least 30 minutes before serving. This chilling time allows the flavors to meld—the chicken absorbs the dressing, and the grapes and celery crisp up. You can serve immediately, but it’s better after a short chill.
  8. To serve, scoop a generous portion onto a bed of lettuce, into a croissant, or between two slices of soft bread. Garnish with extra chives and a few grape halves if desired. This salad is excellent for lunch, a light dinner, or as a party sandwich filling.

Notes

Storage: Store in an airtight container in the refrigerator for up to 3 days. The salad may release some liquid as it sits; stir before serving. Freezing: This dish is not suitable for freezing because the creamy dressing and grapes will suffer in texture. Reheating: Serve chilled; do not microwave. If you prefer a warm chicken salad, stir in 1-2 tablespoons of warm water before serving. For a lower-fat version, use all Greek yogurt instead of mayonnaise, but expect a tangier flavor.
