Pioneer Woman Cajun Chicken Pasta

This dish combines seasoned chicken with bell peppers, onions, garlic, and pasta, all tied together in a luscious cream sauce. The Cajun spice mix adds warmth and depth, while the cream makes it indulgent and comforting. It’s a one-pan wonder that comes together in about 30 minutes.

Ingredients

Scale
  • 2 large chicken breasts, cut into strips

  • 2 tablespoons Cajun seasoning

  • 2 tablespoons olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 small onion, thinly sliced

  • 3 cloves garlic, minced

  • 3 cups cooked penne pasta (or linguine)

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • 2 tablespoons butter

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Season and cook the chicken

Coat chicken strips with Cajun seasoning. Heat olive oil in a skillet and cook chicken until golden brown and cooked through. Remove and set aside.

Step 2: Sauté vegetables

In the same skillet, add sliced peppers, onions, and garlic. Sauté for 3–4 minutes until softened.

Step 3: Make the sauce

Add butter, then pour in chicken broth and heavy cream. Stir well and let simmer for 5–7 minutes until slightly thickened.

Step 4: Add pasta and cheese

Stir in the cooked pasta, Parmesan cheese, and chicken strips. Toss everything together until well-coated in the creamy sauce.

Step 5: Serve hot

Garnish with fresh parsley and an extra sprinkle of Parmesan before serving.
