2 large chicken breasts, cut into strips
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, thinly sliced
3 cloves garlic, minced
3 cups cooked penne pasta (or linguine)
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 tablespoons butter
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Coat chicken strips with Cajun seasoning. Heat olive oil in a skillet and cook chicken until golden brown and cooked through. Remove and set aside.
In the same skillet, add sliced peppers, onions, and garlic. Sauté for 3–4 minutes until softened.
