Pioneer Woman Blackberry Cobbler

Pioneer Woman Blackberry Cobbler recipe

This cobbler is a Southern-inspired dessert featuring a tender, cake-like batter that rises around fresh or frozen blackberries as it bakes. It’s the perfect balance of tart fruit and buttery sweetness, making it ideal for family gatherings, Sunday dinners, or a quick weeknight dessert. Best of all, it comes together in minutes — no fancy equipment or pie dough required.

Ingredients

Scale

  • 1 stick (½ cup) unsalted butter, melted

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 1 cup milk

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • 2 cups fresh or frozen blackberries

  • ¼ cup additional sugar (for sprinkling on top)

Instructions

Step 1: Preheat the oven

Set your oven to 350°F (175°C) to warm up while you prepare the batter. Place the butter in your baking dish and let it melt in the oven.

Step 2: Mix the dry ingredients

In a mixing bowl, combine flour, sugar, baking powder, and salt. Whisk well to evenly distribute all ingredients.

Step 3: Add the milk

Pour the milk into the dry ingredients and whisk until the batter is smooth and lump-free. It should have a thin, pourable consistency.

Step 4: Combine with melted butter

Remove the baking dish with melted butter from the oven. Pour the batter directly over the butter but do not stir — this creates the cobbler’s signature layered texture.

Step 5: Add the blackberries

Evenly scatter the blackberries over the batter. As it bakes, the batter will rise up around the berries, creating a golden crust. Sprinkle the remaining sugar over the top for a slightly crisp finish.

Step 6: Bake the cobbler

Bake for 45–50 minutes, or until the top is golden brown and the edges are bubbly. The berries should be tender and juicy, and the crust lightly crisped.

Step 7: Cool and serve

Allow the cobbler to rest for 10–15 minutes before serving. Enjoy it warm with vanilla ice cream or whipped cream for the perfect finishing touch.
