This cobbler follows a classic Southern-style method. Butter melts in the baking dish first. A simple batter is poured over it. Sweet peaches and syrup are added on top. As it bakes, the batter rises around the fruit, creating a soft cake-like layer underneath and a lightly crisp top. It is rustic, easy, and almost impossible to mess up.

Ingredients

  • Canned sliced peaches (2 cans, 15 oz each, in syrup)

  • Unsalted butter (½ cup / 1 stick)

  • Granulated sugar (1 cup)

  • All-purpose flour (1 cup)

  • Baking powder (1½ teaspoons)

  • Salt (¼ teaspoon)

  • Milk (1 cup)

  • Vanilla extract (1 teaspoon)

  • Ground cinnamon (½ teaspoon, optional)

Instructions

  • Preheat the oven – Set your oven to 350°F (175°C) so it is fully heated before baking. Place the butter directly into the baking dish and put it in the oven to melt completely. Watch carefully to prevent browning.

  • Prepare the batter – In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined. Pour in the milk and vanilla extract, stirring gently until a smooth batter forms. Do not overmix.

  • Add the melted butter base – Carefully remove the baking dish from the oven once the butter has melted. Without stirring, pour the batter evenly over the melted butter. The layers should remain separate.

  • Layer the peaches – Spoon the canned peaches evenly over the batter. Pour some of the peach syrup over the top for extra moisture and flavor. Sprinkle cinnamon lightly if using. Do not stir the mixture.

  • Bake until golden – Place the dish back in the oven and bake until the top turns golden brown and the edges bubble gently. The batter will rise up around the peaches as it bakes.

  • Rest before serving – Allow the cobbler to cool for at least 10–15 minutes before serving. This helps the filling set and makes scooping easier.
